You would never guess that dessert so good could be made with fruit and whole grains. For an added kick, top with a scoop of non-fat frozen yogurt.
5 cups thinly sliced peeled apples
1 cup fresh cranberries
2 tablespoons granulated sugar
1 teaspoon apple pie spice or ground cinnamon
1/2 cup quick-cooking rolled oats
3 tablespoons packed brown sugar
2 tablespoons whole wheat flour
2 tablespoons butter
Preheat oven to 375 degrees F.
In a 2-quart baking dish, combine apples and cranberries. In a small bowl, stir together granulated sugar and 1/2 teaspoon of the apple pie spice or cinnamon. Sprinkle over fruit mixture in baking dish; toss to coat.
In a small bowl, combine oats, brown sugar, flour, and the remaining 1/2 teaspoon apple pie spice. Using a pastry blender, cut in butter until crumbly. Sprinkle oat mixture evenly over apple mixture.
Bake for 30 to 35 minutes or until apples are tender. Serve warm.
