With all the variety packed into this dish is almost a meal in itself. Add a side of grilled chicken and embellish with a dollop of low-fat sour cream to complete your meal. Try using brown rice in this recipe to get in your whole grains.
1 ½ cups cooked long-grain rice, warm
¾ cup canned black beans, rinsed and heated
¾ cup cooked corn, heated
1 large tomato, diced
1 large green onion, finely diced
2-4 tablespoons chopped cilantro (to your liking)
1 tablespoon fresh squeezed lime juice
Salt to taste
In a large bowl, combine hot rice, heated corn, heated beans, tomato, green onion, cilantro as desired, and lime juice. Toss together. Salt to taste, if desired.
Per serving (without added salt): 140 calories, 1 g total fat, 0 g saturated fat, 32 g carbohydrates, 5 g protein, 5 g fiber, 200 mg sodium, 368 mg potassium, 33 mg calcium.
