Brighten up any winter day with this beautiful and delicious salad.
This salad contains almost half a day’s worth of vitamin A and 100% of daily vitamin C recommendations to help ward off winter colds. Eat with a grilled chicken breast and a glass of fat-free milk for a satisfying, protein-rich lunch or dinner. When choosing salad dressings be sure to check the label for sodium content—aim for less than 100 mg of sodium per serving.
8 cups mixed greens (spinach, arugula, red leaf lettuce)
2 ruby red grapefruits, peeled and cut into sections
2 navel oranges, peeled and cut into sections
½ avocado, cubed
¼ cup sliced almonds, toasted
2 ounces Asiago cheese, shaved
4 tablespoons of your favorite balsamic vinaigrette dressing
Toss all ingredients together in a large salad bowl, enjoy.
