Red, White and Blueberry Salad

Just in time for the 4th of July and summer melon season. This mouth watering combination of watermelon, blueberries and feta crumbles will have you celebrating.

Serves 4

Dietitian's Tip: 

Reduced fat feta cheese is delicious and you’d never know the difference. Feta lends the perfect amount of saltiness to the juicy watermelon and blueberry salad without needing additional salt.

Ingredients: 

2 cups watermelon, cubed
1 cup fresh blueberries
2 tablespoons fresh lemon juice
2 ounces crumbled reduced fat feta cheese
1 tablespoon fresh mint leaves, sliced thin

Preparation: 

Combine the watermelon, blueberries and lemon juice in a large bowl. Toss to combine. Chill until ready to serve. Just before serving add the crumbled feta and thin-sliced fresh mint and toss gently to combine.
